I Flew 2,000 Miles for This Chicken Curry...

I flew 2,000 miles to meet a legendary Chef named Din, his story is fascinating! He was working in his parents Indian restaurant at just 14 years of age, then was running his own restaurant at 16 years of age in Brighton Sussex in the 1970s. He trained many Chefs and even turned around struggling Indian restaurants for his family- he was the go to expert and given the title 'Din Baisab' - meaning 'Brother'' which for a younger man was a an honoury title. Check out his channel here ๐Ÿ‘‰๐Ÿผ ย ย ย /ย @chefdinย ย  This recipe is based on his staff curry recipe here: ย ย ย โ€ขย Iย Flewย 2,000ย Milesย forย Thisย Chickenย Curry...ย ย  INGREDIENTS: Step.1 Add 1 cup of vegetable oil to a pan and temper these spices 2 Tej Pata, 2 Stick of Cinnamon, 1/2 tsp of Kalonji seeds 5 green cardamon and 2 cloves 1/2 tsp of Black Peppercorns Step. 2 Slice 2 Medium sliced Onions (350g) Take 50g of Garlic Ginger paste 2-3 green chillies 1 large tomato and about 14g of Fresh coriander add these to the pan Add 1 heaped tsp of Salt or to taste Cook for 15 minutes on medium heat then remove the tomato skins, mash the base a little Step. 3 Add the spices, 1 1/2 tsp of Turmeric, 1 tsp of Paprika, 1 tsp of Kashmiri Chilli Powder 1 tsp of Cumin, 2 tsp of Coriander powder and then add 3 new potatoes- cook the spices out on a higher heat 3-4 mins.
