Do not overwork. Roll out (or use your hands) to flatten to 3/4 inch thickness on a lightly floured surface (like your counter). Cut with a cup or Biscuit cutter into 12 equal biscuits. Place with their sides touching in a buttered cast-iron frying pan. Pre-heat the oven to 400 Degrees Fahrenheit while you let the biscuits just rest and rise a smidgen. When oven is hot, place them in and watch for them to be golden in 10-12 minutes. Pull them out with hot-pads.
