I recommend 👍👍👍 Ingredients for 1 loaf: Step I 260 g T2000 rye flour (organic) 260 ml cold water approx. 160 g rye sourdough starter (4 heaped tablespoons) • Domowy zakwas żytni do pieczenia chleba / ... link to the starter Step II 260 g T2000 or T750 rye flour 100 ml cold water 1 heaped teaspoon salt Seeds: sunflower, pumpkin, flaxseed, and black cumin for sprinkling on top I. Place the flour in a bowl, add the water, and the starter. Mix thoroughly and leave covered for about 4 hours to allow the ingredients to rise. II. After this time, add the remaining flour, water, salt, and seeds. Mix thoroughly. The dough should be thick enough to pull off a spoon. Transfer the dough to a parchment-lined baking sheet, smooth the surface, and let rise for about 4 hours. III. Preheat the oven to 250°C (472°F), lightly spray the top of the dough with water. Sprinkle with black cumin seeds, and bake. After baking, reduce the temperature to 220°C (420°F). Bake in a metal baking sheet for about 1 hour, or in a ceramic baking sheet for about 50 minutes. Use a high-low oven. After baking, remove the bread and let it cool. I encourage you to bake; it's a wonderful experience. Pour flour into a bowl, pour water and leave. Stir thoroughly and leave it covered for about 4 hours to rise so that the ingredients work intensively. II. After this time, add the remaining flour, water, salt, and seeds. We mix thoroughly. The dough should be of such consistency that it pulls from the spoon. Put the dough into a paper mold, level it, and leave it to rise for about 4 hours. III. We turn on the stove to 250 degrees C, gently sprinkle the top with water. Sprinkle black cumin seeds and put them in the oven. After putting in the bread, reduce the temperature to 220 degrees C. Bake in a metal tray for about 1 hour, and in a ceramic tray for about 50 minutes. Top and bottom oven. After baking, remove and leave to cool. I encourage you to bake. It's a great adventure.
