Ingredients 1 tbsp butter 2 medium shallots 1-2 tbsp fresh parsley or chervil 1/2 tsp fresh tarragon 2 oz white wine 2 oz white balsamic vinegar or tarragon vinegar 1-2 oz of water 3 egg yolks 4 oz or 8 tbsp clarified butter salt and pepper to taste
