Ingredients 600 grams of flank steak, cut into approximately 2-centimeter thick steaks A quarter cup of cachaça or 60 milliliters Half a tablespoon of spicy paprika 1 teaspoon of ground cumin Half a tablespoon of salt 1 drizzle of oil Half a cup of chopped onion Half a cup of chopped bacon 1 cup of sausage, cut into small cubes Half a tablespoon of minced garlic 3 bay leaves 800 milliliters of hot water Reserved marinade broth 1 cup of parboiled rice or 200 grams 700 milliliters of hot water 3 sliced kale leaves or 100 grams 200 grams of grated curd cheese Instructions Season 600 grams of flank steak, cut into 2-centimeter thick steaks, with a quarter cup of cachaça and half a tablespoon of paprika. Spicy, 1 teaspoon ground cumin, and 1/2 tablespoon salt. Marinate for 1 hour. In a pressure cooker, over medium heat, heat a dash of oil and brown the steaks. Reserve the marinade. Once browned, add 1/2 cup chopped onion, 1/2 cup chopped bacon, 1 cup diced sausage, 1/2 tablespoon minced garlic, 3 bay leaves, and brown a little more. Add 800 milliliters of hot water, the reserved marinade broth, cover the pot, and cook for 35 minutes after pressure is reached. Release the pressure, stir well to coarsely shred the meat, add 1 cup parboiled rice and 700 milliliters of hot water. Replace the lid and cook for another 5 minutes after pressure is reached. Turn off the heat, release the pressure, add 3 sliced kale leaves, and stir. To serve, place a portion of grated coalho cheese on individual plates.
