Basque Burnt Cheesecake

This cheesecake has origins in the Basque region of Spain, particularly in La Viña, a café in the resort town of San Sebastian. There are many versions of this cheesecake. Some prefer to have a gooey center while some prefer the firmer center when the cheesecake is served. This cheesecake is baked at a high temperature to produce that beautiful dark brown top due to caramelization. This cheesecake is not smooth and dense unlike the typical American cheesecake. It has a gooey center also due to the baking temperature. Enjoy this specialty of Basque! I have many recipes to share with you.
