Scottish Amber Ale from 1893 – Brewed on the Union Set with Fountianbridge yeast. Grain to Glass.
In this video, we recreate a historic Scottish beer from the archives – Ushers 68/-M, a strong “mild” ale brewed in Edinburgh in 1893. But this is nothing like a modern mild… Using the original brewing records, we interpret the recipe with Golden Promise malt, amber malt, and Goldings hops, then ferment it on our traditional Burton-style Union Set to see how this historic beer really behaves. want to have a go at brewing this? you can buy the recipe kit from The malt Miller https://www.themaltmiller.co.uk/produ... 🍺 What makes this beer special? A “mild” at ~7% ABV (very different to today!) Brewed using authentic 19th century inspiration Fermented on a Union Set for smoothness and character Featuring a new experimental dried Fountainbridge yeast from WHC We also compare: 👉 Union Set vs standard fermentation 👉 Dry hopped vs non-dry hopped versions 👉 How yeast and process shape flavour And of course… we finish with a full tasting alongside guests from The Malt Miller and WHC Lab. 🔧 Recipe Highlights Malt: Golden Promise, Amber Malt Hops: Goldings OG: ~1.064 IBU: ~72 Yeast: WHC Fountainbridge (Scottish Ale strain) 🍻 What you'll see in this video Brewing a historic Scottish ale Union Set fermentation in action (LOTS of froth!)
