Mutton Rosh – A traditional Peshawari delicacy made with tender mutton, slow-cooked with minimal spices to highlight the natural flavor of the meat, resulting in a rich, aromatic, and comforting dish. Turai Ki Sabzi – Fresh ridge gourd cooked with onions, tomatoes, garlic, and simple desi spices for a light, healthy, and flavorful vegetable curry. Keri Aur Lal Mirch Ki Chutney – A tangy and spicy chutney prepared with raw mangoes, dried red chilies, garlic, and aromatic spices, making it the perfect accompaniment to BBQ, curries, and everyday meals. These easy homemade recipes bring authentic Pakistani flavors to your table and are ideal for lunch or dinner. RECIPES FEATURED Mutton Rosh Ingredients: • 750 g mutton • 250 g mutton fat • 250 g tomatoes, chopped • 2 onions, sliced • 1 tbsp black pepper • 6 cloves • 1 piece cinnamon stick • 1 whole garlic bulb • 50 g fresh ginger • 1 tsp salt • ½ cup cooking oil • Green chilies and fresh coriander, as required (for garnish) Method: In a large bowl, combine the mutton, mutton fat, onions, ginger, garlic, cloves, cinnamon, salt, black pepper, and tomatoes. Mix well. Heat the oil in a large wok or deep pan. Add the meat mixture and cook over low heat for about 2 hours, or until the mutton is tender and fully cooked, stirring occasionally. Garnish with chopped green chilies and fresh coriander, and serve hot. Keri aur Lal Mirch ki Chutney Ingredients: • 10 whole red chilies • 4 raw mangoes, peeled and chopped • 1 teaspoon salt • ½ bunch fresh mint leaves • ½ bunch fresh coriander • 4 cloves garlic Method: Add all the ingredients to a blender and blend until smooth. Serve fresh with snacks, barbecue, or your favorite meal. Turai Ki Sabzi Ingredients: • 1 kg ridge gourd, washed and cut into pieces • 10 cloves garlic • ½ kg tomatoes, chopped • ½ kg onions, sliced • 10 green chilies • 1 tsp turmeric powder • 1 tsp salt • 6–8 whole dried red chilies • Curry leaves, as required • ½ bunch fresh coriander, chopped • ½ tsp all-spice powder • 1 tsp cumin seeds Method: Wash and cut the ridge gourd into medium-sized pieces. In a pot, combine the ridge gourd, tomatoes, green chilies, salt, turmeric powder, All spice powder, and 2 cups of water. Cook until the ridge gourd is tender and the water has completely evaporated. In a separate pan, cook the sliced onions for 5–6 minutes. Add the garlic, curry leaves, cumin seeds, and whole dried red chilies, and sauté until fragrant. Pour this tempering (tarka) over the cooked ridge gourd.
