Then, wash the amaranth very well several times until the water runs completely clear. This step helps remove impurities and improves the soup's texture. Once clean, add the amaranth to the pot along with the 3 garlic cloves and the previously chopped potatoes. Bring everything to a boil and cook for approximately 5 minutes. Meanwhile, chop the carrot, the two parsley stalks, the corn, and the 4 fresh oregano leaves. If you don't have fresh oregano, you can also use dried oregano. We'll set the chard leaves aside for the end of the preparation. After 5 minutes, add the carrot, corn, parsley, and oregano to the pot. Cook over medium heat for about 20 minutes. If, after this time, you notice that the corn or carrot is still a little firm, continue cooking for another 5 minutes or until all the ingredients are tender. When the soup is ready, turn off the heat and add the chopped Swiss chard leaves. Then, stir in 2 tablespoons of olive oil and mix gently. Cover the pot and let it rest for 7 minutes. The residual heat will gently cook the Swiss chard, helping to better preserve its color and texture. And that's it!
