Happy New Year! Wishing you many happy memories in 2025☺. Today, I would like to share with you a recipe for Strawberry Daifuku, which you can easily make at home. The Gyuhi(mochi) is made by using glutinous rice flour(shiratama flour) , then filling with anko (sweet bean paste) and topping with strawberries. The Gyuhi in this recipe is made with a small amount of sugar, but it can be refrigerated for 2 to 3 days and still be soft and edible. ▷Ingredients (for 6 pieces) 60 g glutinous rice flour 120 g water 20 g sugar 2 tbsp roasted soybean flour 180g~ sweet red bean paste (30g~ per piece) strawberry ▷How to make: 1. Put the glutinous rice flour in a bowl, add water a little at a time, and mix to avoid lumps. 2. Heat in a microwave oven at 600W for 1 minute. 3. Mix well to make a uniform mixture, then add sugar and mix until blended. Microwave at 600W for 1 minute. 4. Mix well again and microwave at 600W for 1 minute. Heating is finished when it becomes shiny and a little transparent. 5. Spread the roasted soybeans flour on a bat and spread the gyuhi so that it forms a rectangle. Sprinkle with roasted soybeans flour and cut into 6 equal pieces. 6. Take out about 30g of red bean paste and roll it up. Wash strawberries, pat dry, and remove stems. 7. Wrap the bean paste in the gyuhi and sprinkle kinako (soybean flour) if it is too sticky. 8. Cut a slit in the Daifuku with scissors and place a strawberry on top.
