Zigeunerfleisch aus dem Dutch Oven
This time we're serving delicious gypsy meat from the Dutch oven. Very tasty... see for yourself. Best, Michael Ingredients: 2-2.5 kg pork neck or loin 4 gherkins and 200 ml pickle juice 3 onions 3 red bell peppers 1 teaspoon chili oil for frying 2 tablespoons tomato paste 2 cans kidney beans 2 cans corn Thyme sprigs Rosemary sprigs 750 ml vegetable stock 2 tablespoons paprika Marinade: 2 tablespoons mustard 2 tablespoons tomato paste 2 tablespoons chili oil 2 tablespoons smoked paprika 3 garlic cloves or 1.5 cloves garlic 1.5 tablespoons each salt and pepper Preparation: Finely chop the garlic, prepare a marinade from tomato paste, mustard, chili oil, salt, pepper, and smoked paprika, and add the garlic. Cut the meat into bite-sized pieces and marinate overnight. Cut the onions into half rings and dice the bell peppers. Finely dice the gherkins. Bring the Dutch oven to temperature, heat the chili oil, and brown the meat in batches. Once the meat is browned, set it aside for now. Now brown the onion rings, then add the bell peppers and herb sprigs. Be careful not to burn the sprigs while browning. Remove the herbs, add the tomato paste, and roast them. Now deglaze the pan with the stock and add the gherkins and the gherkin juices. Once the mixture is simmering, add the meat again and let it simmer for about 1 hour. After an hour, add the corn and beans and let it simmer for another 30 minutes. Now our gypsy meat is ready. You can serve it with pasta, rice, or fries.
