Laugenbrezel selber machen - Brezeln halb und halb (immer frisch)

This way, they can be prepared in advance and baked fresh for breakfast. Ingredients: TA 145 200 g wheat flour / type 550 200 g spelt flour / type 630 8 g salt 10 g sugar 30 g quark (40%) 30 g butter 25 g yeast 180 g cold water Mix all ingredients and knead into a smooth dough. Knead for at least 8 minutes, rest time for approx. 30 minutes. Weigh out 90g pieces and shape into rounds. 10 minutes and let rest. Flatten the dough pieces, roll them tightly, and lengthen them slightly (10 cm). Then set them aside briefly and let them rest. Now roll each piece of dough to approximately 60 cm in length, deliberately keeping the center "bulgy" and the ends tapered. Set each piece of dough aside and let it rest briefly (until the next one is rolled out accordingly). Now roll it again briefly and then shape it into a pretzel (fold it twice and press the ends onto the sides (at the end of each belly)). The finished pretzel is then reshaped with your hands and placed on a baking sheet lined with parchment paper. Intermediate step: The pretzel Place in the freezer for at least 1 hour. Dip the frozen pretzel briefly into the lye, drain, and place on a greased baking sheet. Sprinkle with coarse salt and let thaw at room temperature for about 30 minutes. Oven: Make a cut through the top of the pretzel and bake at 210°C for about 15 minutes without additional steam. Kneading time: 8 minutes. Dough resting time: 30 minutes. Oven: Bake without steam at 205°C for about 10 minutes / 190°C for another 5 minutes. Lye: Make a 2.5% lye solution: 1 liter of cold water and 25 g of sodium hydroxide (available as "lye pearls" at health food stores or mills!) Caution! Always add the sodium hydroxide to the water, not the other way around!
