Cake: 3 eggs 220 ml of oil (I used sunflower oil, but you can use soybean oil too) 150 g brown sugar 75 g demerara sugar 200 g rice flour 1 teaspoon potato starch 1 teaspoon xanthan gum 4 tablespoons sweet potato starch 200 g grated carrot 1 teaspoon nutmeg Cinnamon to taste 150 ml hot milk (you can substitute with water if you are lactose intolerant) 1 capful of baking powder Chopped walnuts and chocolate chips to taste (I used about 150 g of each) For the glaze: 120 g Cream cheese 1/2 carton of heavy cream 100 ml of xylitol (but you can also use powdered sugar).
