Ingredients: Caramelized Puff Pastry 1 sheet frozen puff pastry (Bellamy’s: 20.5×20.5×H7cm/150g) 30g powdered sugar Diplomat Cream Custard: 250g milk Vanilla paste (or extract) 2 egg yolks 50g granulated sugar 25g flour 3g gelatin Whipped Cream: 100g heavy cream (47%) For decoration: 100g heavy cream (42%) 8g granulated sugar 5g non-melting powdered sugar 1 pack strawberries (350g) 50g sliced almonds How to Make Glaze: Not shown in the video, so please refer here! 1g sheet gelatin 25ml water 2.5g sugar Soak the gelatin in plenty of cold water (about 10 minutes). In a microwave-safe bowl, combine water and sugar, heat for 30–40 seconds until about 60°C, and dissolve the sugar. Squeeze out excess water from gelatin and add, stirring to dissolve completely. Cool over ice water until slightly thickened, then brush over the strawberries.
