Those of you making kimchi this year, definitely try this recipe! 🔥 Measurements & Recipe Summary 1.2kg pork shoulder 1 onion, 1 stalk green onion, ginger, whole garlic 5 tablespoons mirin 2 tablespoons soy sauce 1 tablespoon soybean paste A pinch of pepper 1 paper cup water (important!) Optional ingredients: 1 tablespoon coffee or 1/2 bottle of Ssanghwatang → Removes odor and enhances flavor 1) Place onion, green onion, garlic, and half of ginger in the bottom of the pot. 2) Cut the meat into 4-5cm thick slices and place on top. 3) Cover with remaining ingredients. 4) Add seasoning and just 1 cup of water! 5) Once boiling, reduce heat to low for 1 hour. 6) Flip once for about 40 minutes. 7) Turn off the heat and let sit for 10 minutes → Tenderness is achieved here.
