Berliner Weisse - Kettle Sour - Why I'm Taking a Break from Brewing IPA's
Recently I've heard a lot about how good Berliner Weisse beers are. So I set out to go find an example or two to try. Sadly I was unable to find any at the stores I visited in my town. However, I was able to find some cool looking IPA's that I just HAD TO try! This has been happening more often lately as some of the styles of beer that I really want to drink are becoming harder to find, yet the selection of IPA's is growing ever larger. This has led me to making the decision to stop brewing IPA's myself. It's not that I don't like IPA's, it's just that with so many good examples of commercially brew examples available it makes it easier to just buy those and brew those harder to find styles myself. So thats exactly what I'm going to start doing! I'm starting with my very first kettle soured Berliner Weisse. Here is the recipe on Brewfather that I used for a 5 gallon batch! Directions: -Mash for 1 hour at 149F -1st boil: Boil for 15 minutes then cool to around 95F -I added about 5 mls of Lactic Acid at this point to bring the PH down to around 4.5 -Add your bacteria directly to the kettle. I used Good Belly Probiotic drink Blueberry Acai, but you can use any flavor you want or purchase Lactobacillus for brewing from: https://www.morebeer.com/index?a_aid=... -Make sure your kettle is sealed up good to prevent any other bacteria from entering and try and keep your kettle around 95F during the souring process -The souring process should take somewhere between 24-72 hours. Make sure you take PH reading along the way to check on the PH. -My PH got down to 3.37 in about 24 hours and I'm really happy with the tart but not to sour flavor of this beer. -2nd boil: once your desired PH is reached you need to boil agin for at least 15 minutes to kill off the Lactobacillus. -Once boiling add hops (If boiling for longer than 15 minutes you'll need to adjust the amount of hops used to reach the desired IBU's) -Chill down to yeast pitching temps -Transfer to fermenter and pitch yeast (any clean yeast strain should do) -Ferment as usual Finally bottle or keg and ENJOY!!!! 0:00 Intro 0:52 The search for a Berliner Weisse 2:50 Brew Day 5:55 Enter barking dogs 6:54 Tasting 9:25 Outro Below you'll find affiliate links.
