LEMON PIE SHORTBREAD: ▪︎ 250 g all-purpose flour ▪︎ 150 g cold butter ▪︎ 150 g sugar ▪︎ 1 egg FILLING: ▪︎ 300 ml milk ▪︎ 100 ml lemon juice ▪︎ Zest of ½ lemon ▪︎ 150 g Sugar ▪︎ 5 egg yolks ▪︎ 40 g cornstarch ▪︎ 50 g butter SWISS MERINGUE: ▪︎ 150 g egg whites ▪︎ 300 g sugar Process the very cold butter with the flour and sugar (this dough is characterized by not containing baking powder, vanilla extract, or citrus zest). If you don't have a food processor, you can make a crumbly mixture with your fingertips or a pastry blender. Add the egg and process a little more. Combine the dough by hand without kneading. Flatten it inside a plastic bag and freeze for 15 minutes. Roll out the dough to 5 mm thick and line a 24 cm springform pan. Prick the base and freeze for another 10 minutes. Remove from the freezer and bake in a preheated oven at 180°C (350°F) for approximately 15 minutes. (It is very important to follow these steps, especially the preheated oven, to prevent the edges from shrinking since we won't be placing anything on top.) Remove from the oven and let cool in the pan, as the pastry is very fragile when hot. For the lemon cream, boil the milk with half the sugar. In another bowl, whisk together the egg yolks, cornstarch, lemon juice, and the remaining sugar. Add the boiling milk and cook over low heat, stirring constantly, until thickened. Remove from the heat and stir in the butter until well combined. Pour this filling over the baked tart crust. Cover and chill. For the meringue, place the sugar and egg whites in a double boiler and stir constantly until the sugar crystals dissolve. The bowl must be perfectly clean and dry. Remove from the heat and wipe away any condensation from the bowl to prevent water from falling into the mixer. Beat for 5 to 10 minutes until stiff peaks form.
