Enjoying an exceptional location, it sits right beside the source of the “Lingnan First Spring.” Guided by the philosophy of health and wellness, the restaurant creates delicious dishes cooked with fresh mountain spring water. Nanquan Xuan originated from Luming Restaurant (also written as 麓鳴酒家). Its executive chef, Fan Qilin, founded this restaurant after venturing out on his own. —— Shishi Chicken (Municipal Normal School Chicken): Legend has it that Shishi Chicken got its name because the white-cut chicken was originally sold near the Guangzhou Municipal Normal College. It later became one of Guangzhou’s Ten Famous Chickens, alongside Qingping Chicken, Taiye Chicken, Wenchang Chicken, and others. What sets Shishi Chicken apart from other white-cut chickens is its dipping sauce: in addition to the obligatory soy sauce, ginger, and scallion, it features a unique clam-oyster sauce (xianhao jiang). Zhou Woguo, in the 10th year of the Republic of China (1921), partnered with his close friend Wang Xin to establish “Xin Ji” on Shuyuan Street, to the west of today’s Beijing Road. After the Xinhai Revolution, the Nationalist Government established the “Municipal Normal College” (abbreviated as “Shishi”) on Yuexiu Shuyuan Street. Xin Ji’s white-cut chicken was prepared by immersing the chicken in a broth simmered from chicken bones, then chopping it into pieces and removing the large bones. Served with clam-oyster sauce and ginger paste, the chicken had a mellow flavour, crispy skin, and smooth meat, winning great popularity among the citizens. Because of its convenient location beside the college, it was named “Shishi Chicken.” The second-generation successor of Xin Ji’s Shishi Chicken was Zhou Dake, Zhou Woguo’s son. Zhou Dake served as executive chef at both Luming Restaurant and Tingyu Xuan (Listening to the Rain Pavilion) on Yuexiu Hill. The third-generation successors are Zhou Yingkang and Fan Qilin. Zhou Yingkang, Zhou Dake’s son, once served as executive chef at the Dongfang Hotel and later opened the Datongqian Restaurant in Huadu, which closed due to poor management. Fan Qilin was an apprentice taken on by Zhou Dake during his time at Luming Restaurant. He later became executive chef of Luming Restaurant and subsequently opened Nanquan Xuan Restaurant.
