Recipe Share | Refrigerator Bran Muffins

This is a neat recipe I obtained from The Frugal Gourmet's TV show many years ago. It is delicious, relatively healthy, and there is no waste. Best of all, you can keep the batter covered in the refrigerator for up to 6 weeks and bake as many muffins you desire at any given time. Music "Where I Am From" by Topher Mohr and Alex Elena via YouTube Audio Library INGREDIENTS o 1/2 cup butter o 2 cups sugar o 2 cups boiling water o 5 teaspoons baking soda o 4 eggs o 1 quart buttermilk o 5 cups flour o 2 cups 40% bran flakes o 4 cups all-bran cereal DIRECTIONS 1. Mix 2 c boiling water and 5 t baking soda, let cool. 2. Cream butter and sugar. 3. Add eggs and blend well. 4. Add buttermilk alternatively w/ flour, mixing well. 5. Add baking soda/water mixture. 6. Blend in bran flakes and All Bran. 7. Store in frig at least 24 hours before using. 8. To make muffins: Spoon batter into paper-lined muffin tins; bake at 350 degrees for 25-30 minutes. 9. NOTE: Batter will keep in frig for 6 weeks.
