You’ll come along as I make my usual breakfast, prep some of our go-to meals, make homemade Uncrustables for the kids, turn the leftover bread crusts into French toast muffins (because we’re not wasting those!), and get dinner ready with chicken parm pizza for us and chicken tenders for the kids. I also share a few mindset shifts that have helped us lose over 200 pounds as a family and stay consistent even when motivation disappears. Line a sheet pan with parchment paper or silicone mats. Mix everything together in a bowl. Spread into a thin crust (about 1/4 inch thick) on the prepared sheet pan. Bake for 20–25 minutes until golden and firm. Remove, add toppings (sauce, cheese, etc.). Bake another 5–10 minutes. Chicken Tenders/Nuggets 1.5 lbs ground chicken 1/4 cup parmesan cheese 1/2 cup panko breadcrumbs 3 cloves minced garlic 1 egg 1/2 tsp garlic powder 1/2 tsp paprika 1/2 tsp Italian seasoning 1/2 tsp oregano Salt + pepper Coating: 1/4 cup parmesan cheese 1/2 cup panko breadcrumbs Preheat oven to 400°F. Mix chicken, parmesan, garlic, egg, and seasonings. Form into nugget or tender shapes (I use a cookie scoop to get even portions). Press into panko/parmesan coating. Place on lined baking sheet.
