Ingredients: Crispy Crust Mooncakes Eggs 2 (each about 60 grams), 0:37 Corn oil 250grams, 0:47 Caster sugar 250 grams, 0:50 Baking soda 2 grams, 0:55 Baking powder 2 grams, 0:57 Flour 500 grams (low-protein preferred, all-purpose works), 1:18 After kneading into dough, proceed directly to shaping. Use 40 grams of dough and 60 grams of filling for each mooncake. It’s best to bake them in small cake molds to prevent sinking. Beginners can totally make them.. Baking Temperature (80L Oven): Preheat to 200°C top heat and 180°C bottom heat. Bake on middle rack for 15-20 minutes. Bake longer for a crispier texture. Since fillings are pre-cooked, only the crust needs baking, so the temperature is not critical. Ingredients: Cantonese Mooncakes Invert syrup (mooncake-specific) 400 grams, 3:48 Corn oil 150 grams, 3:58 Lye water 8 grams (check concentration instructions before use), 4:02 Flour 500 grams (low-protein preferred, all-purpose works), 4:41 Thoroughly mix all liquid ingredients before adding flour. Reserve extra 50 grams of flour, because syrup thickness varies by brand and batch. Add some flour if dough feels soft (requires experience; overly soft dough collapses after baking). Let dough rest 1-2 hours after kneading. Use 70 grams of filling and 30 grams of dough per piece (adjust to 60 grams of filling and 40 grams of dough if needed). Avoid flour on inner surface when wrapping. Lightly mist shaped mooncakes with water before baking. Baking Temperature (80L Oven): Preheat to 200°C top heat and 180°C bottom heat. Bake on upper-middle rack for 8 minutes. Cool completely, then brush with thin egg wash (3 yolks + 1 whole egg + 1 grams of salt – prepare 30min ahead). Put them back into and bake until golden. Cool fully before wrapping. Store in cool place 2-3 days for oil releasing. • The temperatures in the recipe are all in celsius degrees.
