this rotolo is a pretty unusual and incredibly delicious pasta dish. it’s such a joy to eat – a real showstopper if you want to get fancy for you next dinner party. this is the dish that Jamie Oliver was making when he got discovered and for good reason - it's creative, unusual, and requires a bit of skill (though I think anyone with patience should give it a go!) my version combines the best spring flavors (mint, peas, spinach, prosciutto, pine nuts, and parmesan) with a super flavorful, fresh egg pasta, toasted pine nuts, and lots of brown butter and fried sage. once you learn the method, this dish is extremely flexible - you can add whatever sauce you like and it'll be a dream! enjoy!
