We went to Tempura Kuruma in Tatebayashi City, Gunma Prefecture. It's a 15-minute taxi ride from Tatebayashi Station. The restaurant is located in the middle of a rice field. We arrived at 5:30 PM on this day. It was right at sunset, and the view of the sun sinking into the countryside further enhanced the location. It's also nice that the omakase course doesn't start all at once, but at different times. Chef Tomoya Kurumazaki comes from the long-established tempura restaurant Tenichi, but was so shocked by the tempura at Niirume in Nagoya that he began to rethink his tempura batter. The flour is chilled to -60°C to suppress the development of gluten, which causes lumps, resulting in a batter that melts in your mouth and retains the umami of the filling. Without lumps, the food cooks quickly. This means it doesn't absorb excess oil, so you won't get tired of eating it. The oil is a blend of light sesame oil and corn oil, which gives it a subtle sesame flavor without being too strong. They even go to the trouble of changing the oil again before adding the conger eel. Honestly, it's surprising that you can get tempura of this high standard in Gunma Prefecture.
