Stuffed Potatoes Baked Over Hot Coals in Our Misty Village Garden

We hollowed out freshly baked potatoes, filled them with herbs, peppers and tomato, and set them over hot charcoal until the tops turned golden. Living Here · Episode 19 There is no oven in this video and no rush. Jahantaj works at the little table on the terrace, the forest and the mist behind her, chopping parsley, green chillies and tomatoes while the potatoes soften in their skins. She scoops out the centres, folds the filling back in, and carries them to the brazier, where a bowl of glowing coals does the slow work that a kitchen oven usually does indoors. Baked potatoes are humble on their own. Stuffed and finished over live charcoal, they become something else entirely: a crisp, smoky skin holding a soft, savoury middle scented with fresh garden herbs. Everything on the tray was grown or gathered close to the house, which is the whole point of cooking this way. Simple food, prepared slowly, tastes of the place it came from. As always there is no narration. What you hear is the fire, the birds, the rain moving through the trees, and the quiet of the valley. Put your headphones on, slow down, and cook along with us.
