Roasting a Whole Chicken Above the Clouds, High in the Mountains of Iran
High on a mountain in northern Iran, above a valley filled with cloud, we built a small fire and roasted a whole chicken until the skin turned deep and crisp. We carried everything we needed up the slope: the chicken, a few spices, water, and some simple tools. By the time we reached the top, the clouds had settled into the valleys below us and the air had turned cool and clean. The chicken was rubbed with turmeric, saffron, and wild mountain herbs, then set upright over a fire pit built from the rocks around us. Slowly, over the wood flames, the skin crisped and the meat stayed soft and full of smoke. Alongside it we cooked a simple pan of vegetables to share. When the food was ready, we sat together on a traditional rug and ate without hurry, the dogs resting nearby and the whole valley laid out beneath us. There was no rush and no noise, only the fire, the wind, and the birds somewhere far below. This is the kind of day we left the city for. A long walk, an open fire, a meal cooked slowly, and a view that asks nothing of you. Where concrete meets clay.
