Sourdough in a Bread Maker (No Oven)

Several viewers asked if sourdough can be made entirely in a bread maker without using an oven, so I tested three different bread machine recipes: 4-ingredient sourdough 6-ingredient sourdough 7-ingredient sourdough I also wanted to know if it’s possible to dump everything into the bread maker, press start, and get a good sourdough loaf with as little effort as possible. These recipes assume that you already have a homemade sourdough starter. They should work in most bread machines / bread makers, not just Panasonic models. Note about bread pans: Some people say that sourdough can damage non-stick bread maker pans over time. I haven’t experienced this but bread pans are expensive to replace. If you're concerned, I've got another video where the dough is mixed in the bread maker but can be proofed in a bowl and baked in the oven instead. I sometimes opt for bowl-proofing if the dough needs an extra long proof due to cold weather:    • Bread Maker Sourdough: I’ve Stopped Buying...   Recipe: https://hotcooking.co.uk/recipes/star... ------------------------------------ TABLE OF CONTENTS 00:00 - Intro 00:11 - 4-ingredient loaf 00:40 - Bread pan disclaimer 01:04 - The recipe 03:40 - 6-ingredient loaf 05:01 - 7-ingredient loaf 07:25 - Mistakes I’ve made ------------------------------------ INGREDIENTS AND METHOD 4-ingredient loaf 400g strong bread flour (I use 250g white, 150g wholemeal) 10g salt (about 1 tbsp) 270ml water 80g sourdough starter 1. Add 400g of strong bread flour (I use 250g white and 150g wholemeal), 10g of salt, 270ml of water and 80g of sourdough starter to the loaf pan, then place into the bread maker. Select a Basic Dough programme. My machine takes 2 hours and 20 minutes (see blog recipe for the steps). 2. Once the programme has finished, allow the dough to rise until just over halfway up the pan. Any higher and the dough may collapse while baking. The rise time is dependent on room temperature. If it’s warm, you can turn the machine off. Otherwise use a rise-only setting or Panasonic’s 24 hour sourdough starter setting (see blog recipe for temperatures). 3. Bake for 1 hour and 10 minutes then transfer the loaf to a rack. ------------------------------------ 6-ingredient loaf 400g strong bread flour (I use 250g white, 150g wholemeal) 10g salt (about 1 tbsp) 10g sugar (about 1 tbsp) 10ml oil (about 1 tbsp, I use olive) 260ml water 80g sourdough starter 1.
