Never try to scramble eggs quickly, as they will become hard and rubbery. (Le Cordon Bleu – All Culinary Techniques). INGREDIENTS: 4 eggs 2 tablespoons milk or cream Salt Pepper METHOD: Place the eggs in a bowl with the milk or cream. Season with salt and pepper. Beat with a fork for 1 minute. Melt enough butter to coat the bottom of the pan. When the butter is foaming, pour in the egg mixture. Stir constantly with a bamboo spoon over low heat for 5-8 minutes and for another 1-2 minutes off the heat. Serve immediately. #fernandocavinato #scrambled eggs #lecordonbleu
