Arriving in Kyoto, I wanted to try traditional and authentic Kyoto kaiseki cuisine, and experience the pure Japanese cuisine and aesthetics. I found a Michelin two-star restaurant in Gion called Gion Maruyama. To make the experience even more special, I booked a private room when making the reservation. The dishes were very delicate, delicious, and full of seasonal flavors. The beauty of the dishes and their presentation also left a deep impression. The main dish was Biwa Lake fish, a Kyoto spring seasonal specialty, grilled by the chef in the Japanese garden and served on the table. Sipping clear sake while watching the chef grill the fish over charcoal in the garden was a truly luxurious experience of time and space. Bamboo shoots and sansho pepper were in season, but appeared too many times in the dishes, causing some flavor fatigue.
