The breading is so delicious and crispy, the sauce is divine, and the savoy cabbage is fruity and crunchy. In short, it's so delicious, we have to cook it right now! You'll need 1 to 2 kohlrabi heads and a small savoy cabbage, spring onions, and, if you like, pickled peppers. Peel the kohlrabi and cut into even slices. Simmer gently in a pan with water, then let cool briefly. Then dip the slices in the almond butter, which I diluted with water. Then dip them in the cornmeal, then again in the butter, and finally in the breadcrumbs. This is exactly how a perfect coating works. Then, add them to the pan. I use coconut oil for frying (the one from Eden is for frying and baking, vegan, and non-hydrogenated). Please make sure you use good quality oils and fats. This is very important for your health! Now, fry the schnitzels on both sides until the coating is nice and crispy. Then remove them from the pan and let them drain briefly on a kitchen towel. Here's the trick: leave the pan on the stovetop and continue using it. Add a little more fat, then add the spring onions and peppers, then the rest of the almond butter from the breading bowl, bring to a boil briefly, then return it to the bowl and puree. Meanwhile, add the sliced savoy cabbage to the pan with water and sauté briefly with a little salt and pepper. And now it's time!!! Please serve. Enjoy your meal. Spelt breadcrumbs: I used the one from Bauk Hof. Put 3-4 teaspoons of the almond butter into a jar with a lid and shake with lukewarm water (approx. 100ml to 150ml) until creamy.
