Learn how to make rich and flavorful paneer Dum Biryani at home with perfectly cooked basmati rice, golden-fried paneer, and aromatic spices. Ingredients:- Paneer marination ——- 300 g Paneer cubes 1 tsp Kashmiri Red Chilli powder 1/4 tsp Turmeric powder 1/2 tsp Garam masala 1/2 tsp salt Rice ——- 2 cup basmati rice 2 litre water Whole Garam Masala 1 bay leaf 5 green cardamom 2 inch cinnamon stick 2 star anise 1 black cardamom 2 strand mace 2-3 lemon wheels 2 tsp ghee Salt Paneer gravy——- 2 tbsp oil 1 large onion sliced 1 tbsp Ginger Garlic paste 2-3 slit green chilli 2 medium tomato’s chopped 1 tbsp chilli powder 1 tbsp coriander powder 1 tbsp Biriyani masala 1/4 tsp turmeric powder Salt to taste (1 tsp) Curd 3-4 tbsp Crispy fried onion 1 fistful Coriander leaves 1 fistful Mint leaves 1 fistful Layering——- Crispy fried onion handful Mint leaves handful Coriander leaves handful Saffron milk 2 tbsp Ghee 2 tsp Fried cashews n raisins (2 tbsp each) Method- 1. Wash and soak rice for 30 minutes 2. Marinate paneer with the masala for 10 minutes 3. Fry cashews and raisins in ghee, keep aside 4. In same pan, fry paneer for 3-4 minutes in total on medium heat.Do not over cook, it will turn rubbery. Keep aside 5. In a Biriyani pot, add onion , ginger garlic paste , green chilli powder and fry until golden . Add tomatoes and cook until everything turns mushy . 6. Add masala powders given in the ingredients list and cook until raw smell fades . 7. Reduce the heat ,Add curd, stir well cook until oil separates. 8. Add fried paneer, give a mix, cover and cook on low heat for 5-7 minutes. 9. In a pot, add water and put on heat, add whole garam masala, lemon wheels, ghee and salt and give a stir. Once the water starts to rolling boiling- add drained soaked rice , give a gentle stir immediately and let it boil for 8-10 minutes until the rice is 90% cooked. Drain the rice and spread it on a pan or a plate evenly for 5 minutes for a fluffy rice .do not keep the strained rice in the colander for longer time as this will result in a mushy rice underneath. 10. Once the paneer is cooked, add crispy fried onion - this will give a flavourful finish to the gravy, add coriander and mint leaves 11. Add the 90%cooked rice on top off it , garnish with fried onions, coriander and mint leaves, fried cashews and raisins, saffron soaked milk( this gives a rich royal aroma and a nice golden color to the rice), finally add ghee and cover with a foil paper and lid 12. Since everything is almost cooked, , do not keep on high flame at all , put a pan underneath the Biriyani pot -keep on low flame and Dum cook for 15-20 minutes until all the flavours get infused in the steam. 13.
