Welcome to Cooking with Jop! In this video, I share an authentic recipe for Thai green curry, a classic Thai dish. This dish is perfect for a delicious and healthy dinner. Follow the step-by-step instructions and enjoy a delicious meal packed with flavor and a pinch of salt! Ingredients: ½ eggplant Salt 400ml can of coconut milk Dash of oil Green Thai curry paste 1 onion 2 cloves of garlic 1 stalk of lemongrass A few daoen djeroek leaves 1-2 chili peppers 1 red bell pepper 100 grams of snow peas or long beans Can of bamboo shoots 1 tablespoon of fish sauce ½ lime 1 tablespoon of palm sugar 250 grams of chicken breast Handful of Thai basil Instructions: Step 1 Slice half an eggplant, sprinkle and rub with salt, and let drain for half an hour. Step 2 Scoop the top (the cream) from a 400ml can of coconut milk (so don't shake it first) and heat it in a wok or sauté pan with a dash of oil, stirring constantly. Once it has thickened slightly, add 3-4 generous tablespoons of green curry paste (depending on how spicy you like it) and cook, stirring, until the oil is visible. Step 3 Finely chop an onion and 2 cloves of garlic. Add these and cook for a few minutes. Also add a bruised stalk of lemongrass, a few daoen djeroek (kaffir lime leaves), and 1-2 lomboks, sliced into rings, and cook. Step 4 Deglaze with the remaining coconut milk and 150 ml of water and bring to a boil. Step 5 Add the drained eggplant, a red bell pepper cut into strips, about 100 grams of snow peas, sugar snaps or long beans, and a can of bamboo shoots (drain them first). Step 6 Season with 1 tablespoon of fish sauce, the juice of half a lime, and 1 tablespoon of palm sugar. Simmer gently for a few minutes until the vegetables are tender. Step 7 Cut 250 grams of chicken breast into thin slices and simmer briefly at the end until just tender. Add a handful of Thai basil at the end. Serve with jasmine rice. If using chicken thigh fillet, cut it into pieces and add it in Step 5. You can also use shrimp instead of chicken.
