Sonora vs Veracruz (Nadie prepara los mariscos así)

Today we're doing something different. We're traveling from one end of Mexico to the other, crossing from the Sonoran Desert to the Gulf Coast in Veracruz, to understand how seafood is completely reinterpreted depending on the coast you're on. On one hand, we explored Comcaac cuisine, a profound gastronomy where seafood meets the desert. Here, everything is respected with ancestral techniques, straightforward flavors, and a raw connection to nature. On the other hand, we met Pepe, a chef in Veracruz, where the sea offers a radically different cuisine: full of spices, vibrant sauces, and an unmistakable heritage. Beyond comparing recipes, what I take away from this journey is an understanding of the identity of each place through its cuisine.
