The numbers I give in the video assume a specific amount of water and a specific weight of a specific size of shrimp. If you use jumbo or large size shrimp instead, the numbers will be different. In fact, the strength of your burner might also have an effect! The best course of action would be to find out what temperature of water leads to shrimp that cook to 140°F. (Temping the water just makes it easier than probing each individual shrimp.)
