In Spain, some traditional stews that don't contain meat or fish are called "viudos" (widows). These stews weren't vegan out of animal rights activism: they were either made because there wasn't enough money to buy meat—it's no coincidence that they use the same paprika and garlic that flavor chorizo, morcilla, and other sausages—or because they were appropriate for days of abstinence. That is, for Fridays, Lent, or Holy Week. "Vidora potatoes" are typical of these periods of meat abstinence, but they're anything but mortifying. Quite the opposite, in fact: eating them is a real treat, because they possess the comforting simplicity of classic Spanish stews.
