It can be made with pre-cooked legumes, requires no sautéing, and simply involves adding ingredients to the pot: this Tunisian soup with bread and spices is a real find. It's a great addition to any soup. Ingredients (serves 4-6) 700g canned chickpeas with their liquid (or about 500g homemade with 200ml of their cooking water) 250g rustic bread 2 liters chicken stock or water 1 tablespoon tomato paste 4 cloves garlic 1 lemon 1 cinnamon stick 1 level tablespoon ground cumin 1-2 level tablespoons harissa (or another hot sauce plus lemon zest) 3 dried chili peppers (optional) 1 bunch cilantro, parsley, or other aromatic herbs Olive oil Black pepper Salt Instructions 1. Place the chickpeas with their liquid, the stock or water, the cinnamon stick, and, if you want a spicy soup, the chili peppers. Heat over high heat and, once boiling, reduce to medium-low. Let it simmer for about 10-15 minutes. 2. Meanwhile, cut the bread into thick slices and toast them in a toaster, oven, or air fryer. If using a toaster, brush the slices with a little oil and tear them into pieces with your hands. If using an oven or air fryer, brush them with oil before toasting. 3. Lightly crush the garlic cloves with the side of a knife and peel them. 4. Add the garlic, cumin, tomato paste, harissa, four tablespoons of olive oil, salt, and black pepper to the soup. Let it simmer gently for about 10 minutes. Tip: Use one or two tablespoons of harissa depending on how spicy you want the soup. 5. Add two tablespoons of lemon juice and chopped cilantro, parsley, or other herbs to taste. Taste and adjust the salt, pepper, and lemon juice. Tip: If used, remove the garlic and chili peppers before serving. 6. Place the bread at the bottom of the bowls and ladle the soup on top. Finish with a drizzle of olive oil and serve. Tip: For an even more substantial meal, add a poached or soft-boiled egg at the end.
