This late-night ramen cart operates irregularly outside the Japanese izakaya Sansan. The owner previously ran a ramen cart in Gero Onsen, Gifu Prefecture, where few restaurants stayed open late, hoping to give visitors a way to enjoy the hot spring town at night. He later moved to Tokyo with the dream of finding success through ramen. His goal is to spread the culture of food carts, where people can meet and interact, throughout Tokyo. This time, we are featuring the Negi Chashu Ramen. It is a traditional Chinese-style noodle soup highlighting the flavor of dried sardines, perfect as a final meal after drinking. The light shoyu broth carries the umami of dried sardines, creating a pleasantly nostalgic flavor. Its simple combination of noodles and toppings makes it a classic street-cart ramen that does not feel too heavy late at night. Extra noodles are free, making it a satisfying meal. The cart is about a 13-minute walk from Shibuya Station and a 10-minute walk from Shinsen Station.
