For the wonderful stuffed rolls, we will make dough and filling. The ingredients for the dough are 1) 400 g of village flour and 100 g of Farina 00 (total 500 g), 2) One spoon of baking powder, 20 g, 3) One sachet of mastic and one sachet of makhlepi, are 5 g each, 4) Half a spoon of ginger, 5) A glass of lukewarm water (200 ml), takes about 110 ml, 6) One egg, 7) One spoon of sugar and 8) A pinch of salt. The ingredients for the filling are 1) 400 g of salted, hard cheese and a ripe, hard halloumi 200 g. Total 600 g salted, hard cheese, grated is 4 full glasses, 2) Three tablespoons of pastry flour or farina 00, 60 g, 3) Three teaspoons of baking powder 24 g, 4) One sachet of mastic and one sachet of makhlepi, are 5 g each, 5) Half a teaspoon of ginger, 6) One teaspoon of sugar, 7) Half a glass of seedless raisins, about 70 g, 8) About 30 g of mint leaves, 9) It took 5 large eggs. The ingredients for spreading are 1) 1 large egg or 2 small ones and 2) Three tablespoons of sesame seeds, about 30 g. The detailed execution of the recipe is in the full video. Baking begins at 175°C, in air, and we lower the temperature once they start to take on colour.
