Our journey begins in the Genal Valley, a region in Malaga with over 3,500 hectares dedicated to chestnut cultivation. We continue to Bollullos de la Mitación, in Seville, where we observe the growing practice of taking one's own olives to a mill to produce oil for personal consumption. The Seville-based company Aljaoliva has just opened a micro-mill aimed at small olive farms seeking alternatives for processing their harvests without sacrificing quality or tradition. Andalusia boasts 303 food markets, true showcases of local cuisine. Today, we focus on the Atarazanas Market in Malaga, a historic space visited daily by thousands of locals and tourists in search of authentic gastronomic experiences.
