Recipe "Asparagus Gratin with Lamb Fillet" Lamb fillet Green & white asparagus Egg Crème fraîche Root vegetables Garlic Onion Sprouts Tomatoes Potatoes Herbs Butter, oil Salt & pepper Oven: 180°C (350°F) convection - 20 minutes Preparation: We start with the asparagus gratin: Peel the white asparagus and the ends of the green asparagus. Cut the vegetables into two-centimeter (approximately 2-inch) pieces, setting the tips aside. Trim the ends – simply test the green asparagus to see if they are still tender. ... Then finely chop the onion, carrot, celery, and garlic, and sauté the small pieces of asparagus in the pan. Important: don't overcook them; the vegetables should remain light in color. Add the chili, rosemary, and the asparagus pieces, and let everything simmer briefly. Then sauté the asparagus tips. Now add the halved cherry tomatoes. For the sauce, whisk together crème fraîche with an egg, a little water, salt, and pepper until creamy. Place the vegetables in a casserole dish and pour the cream over them. Optionally, add a little sage. Bake in a preheated oven at 180°C (350°F) for about 20 minutes. Meanwhile, prepare the potatoes: cut them into wedges and sauté them in a pan with garlic and rosemary. Season generously with salt. Then add them to the oven. Now for the lamb. Remove any tendons or small bone fragments from the fillet. Salt the meat and sear it in a pan with garlic and rosemary until browned on all sides. Don't cook it too long; the lamb should remain pink inside. Add a little butter at the end and let the meat rest. Simply roll the lamb in a herb mixture. Arrange it on plates with the asparagus gratin and potatoes. Enjoy!
