Add shallot and cook, until softened. Add thyme, carrots, Coke, stock, mustard, brown sugar, salt, and red pepper flakes. Bring to a boil, then cover reduce to a simmer over medium-low. Simmer, until carrots are just tender, about 8 minutes. Using a slotted spoon transfer carrot mixture to a bowl; discard thyme. Increase heat and cook sauce mixture, stirring often, until thickened.
