You're going to love it! -- 🛒 RECIPE INGREDIENTS 🛒 ---- ​​2 eggplants 1 red bell pepper 1 yellow bell pepper 2 shallots 1 red onion Olive oil 2 limes 2 cloves of garlic 20g mint 20g parsley 20g basil 1 tbsp. 1 teaspoon cayenne pepper (or a small fresh chili pepper) Salt and pepper -------- 🧑‍🍳 RECIPE STEPS 👩‍🍳 -------- 1. Preheat the oven to 220°C (425°F). 2. Dice all the vegetables. 3. Line a baking sheet with parchment paper and add the diced vegetables with a drizzle of olive oil. 4. Bake. 5. Meanwhile, press a clove of garlic. 6. Chop the basil, parsley, and mint. 7. Combine everything with a drizzle of olive oil, the cayenne pepper, salt, and pepper. 8. Squeeze the juice of 2 lemons. 9. Mix well. 10. Arrange the vegetables on a plate and drizzle with the chimichurri sauce. 11. Enjoy!
