What we're cooking: Slice the pork belly into 1–1.5 cm thick pieces, season both sides with salt and black pepper, and place them directly on the grill grate over hot coals. Grill until beautifully browned on both sides. While the meat rests, prepare the sauce: grill 2 tomatoes and 1 onion cut into 1.5 cm thick rings until golden with lightly charred edges, then blend until smooth. Add to the tomato-onion base: finely chopped parsley, 4 grated garlic cloves, ½ tsp salt, ½ tsp sugar, ½ tsp ground coriander, 1 tsp Italian herbs, 1 tsp sumac, and ground chili to taste. Finish with 1 tbsp olive oil and 1 tbsp balsamic glaze or balsamic vinegar.
