Ingredients 2 cups basmati rice (soaked for 30 minutes) 250 g homemade paneer (cubed) 1 potato (cubed) 1 carrot (cubed) 1 cup cauliflower florets ½ cup green peas 8–10 beans (chopped) 1 onion (thinly sliced) 2 tomatoes (finely chopped) 2 tbsp oil 1 tbsp ghee Salt to taste Fresh coriander leaves Fried onions (for garnish) Whole Spices 1 bay leaf 1-inch cinnamon stick 4 green cardamoms 4 cloves 1 tsp cumin seeds 8–10 black peppercorns 1 star anise (optional) 1 black cardamom (optional) For Yakhni 4 cups water Ginger Garlic *ghee Mint leaves Coriander stems Whole spices (same as above) Method 1. Prepare the vegetable yakhni by boiling water with ginger, garlic, mint, coriander stems, and whole spices for 15–20 minutes. Strain and keep the stock aside. 2. Lightly pan-fry the paneer cubes until golden. Keep aside. 3. Heat oil and ghee in a pan. Add whole spices and cumin seeds. 4. Add sliced onions and cook until golden brown. 5. Add tomatoes and cook until soft. 6. Add potatoes, carrots, beans, peas, and cauliflower. Cook for 4–5 minutes. 7. Add soaked basmati rice and gently mix. 8. Pour the prepared yakhni, add salt, and cook until the rice is tender and fluffy. 9. Fold in the fried paneer cubes carefully. 10. Garnish with fried onions and fresh coriander, then serve hot with raita or salad. ✨ Cooking Tip: Use aged basmati rice and homemade paneer for the best aroma, fluffy texture, and rich restaurant-style taste.
