BRENCニーダーで作る、新しいベーシックラインのパンレシピ「バゲット」をブレッドリパブリック高橋雅子先生にご紹介いただきました。 高加水の生地に水分をしっかりと安定して含ませるため、生地を一度「オートリーズ」させ、冷蔵庫で一晩寝かせるという工夫をしています。さらに「湯種」も加えるのが特徴です。約20分間という長時間のこね作業になりますが、このオートリーズ生地と湯種の2つをあらかじめしっかりと冷やしておくことで、摩擦による生地の温度上昇を適切に抑えることができます。 [レシピページ] https://brenc.jp/blogs/recipes/baguet...
