OCTOPUS STEW 2 large octopuses and 1 small one 1 large onion, chopped 2 tbsp garlic,chopped 1 tbsp bacon fat 2 tbsp olive oil ½ cup Portuguese malagueta 1 ½ cup burgundy wine 2 ½ cup water Salt and pepper to taste 10 lbs potatoes,cubed ½ cup fresh parsley Cut octopuses into small pieces. In a large pot, add bacon fat, olive oil, onion and garlic until translucent. Add pepper, wine and octopus cover and let cook until fork tender. Add potatoes and parsley. Check for salt and let simmer until everything is cooked.
