Make the perfect marinade from rice vinegar, brown sugar, and salt. Season and cool the rice in a non-metallic bowl. Prepare the filling: slice the cucumber, dry the prawns, and mix cream cheese with mayo. Wrap the bamboo mat in cling film so the rice doesn't stick. Spread the rice on the Nori, sprinkle with sesame, and flip it over (the Uramaki secret!).
