寶哥又教你做雞! 《白切雞》秘製《蒜油+薑蔥蓉》| Chinese White Cut Chicken with Ginger Scallion Sauce & Garlic Sauce

Welcome to 「酒滿飯寶 Chef Po」Channel! White cut chicken (also known as white poached chicken) is characterized by cooking without adding spices or seasonings. The chicken is slaughtered and then poached in hot water or steamed, with no spices or seasonings added during the process, or only a minimal amount. The goal is to let the natural flavor of the chicken shine through, perfectly highlighting the Cantonese cuisine’s focus on preserving the original taste of ingredients. In this white cut chicken video, we’ll poach the chicken for 25 minutes. Adjust the time based on your preference. If you’re worried the chicken isn’t fully cooked, you can poach it for 30 to 35 minutes, but remember not to cook on high heat, or the chicken will become tough and chewy. The process: boil water, place the whole chicken in hot water, lift and dip it three times, then soak it in cold water. Repeat these steps three times. Note: Since the pots and stove heat vary at everyone’s home, make sure to poke the chicken thigh or breast with a needle to check for blood. If there’s blood, poach for another 5 minutes. If you’re concerned about blood near the bones, poach for an extra 10 minutes or longer. Adjust the time to suit your home setup. What dishes would you like to see?
