Ingredients & Method: Marinade: · Grind: ¼ cup each black pepper, fennel seeds, cumin + ⅛ cup chili flakes until smooth. · Mix in a wide dish with: ⅛ cup garlic paste, ⅛ cup ginger paste, 1 cup oyster sauce, 2 cups soy sauce, 3 cups vinegar, ⅛ cup fish sauce, ⅛ cup sesame oil. Fish: · Clean and cut fish, then place in marinade. Fridge for 12–24 hours. Coating & Frying: · Mix 1 cup flour + 1 cup cornstarch (add salt/pepper if you like). · Take fish out, coat completely (inside and out). · Heat oil to 350°F (180°C) and fry until golden and cooked through.
