THE BEST PORCINI MUSHROOMS RISOTTO RECIPE! Delicious dinner!

Ingredients for 4 persons: 0,7lb/320g of rice. 1,7oz/50g dried porcini mushrooms. 1,4oz/40ml soy sauce. 2,2oz/60g of butter (30g/1.1oz for the gravy, the rest for mushrooms and risotto). 16,9oz/500ml of red wine. Parmigiano Reggiano. 1 bay leaf. 5 cloves. 1 tablespoon of cornstarch dissolved in a few ml of water. Garlic. Savory. Parsley. Extra virgin olive oil. Salt. Black pepper. Parsley powder (opzionai). Method: Soak the mushrooms in warm water for 30 minutes. Bring 500ml of red wine to the boil, add bay leaves and cloves and reduce. Grate the Parmigiano Reggiano, chop the parsley and drain the mushrooms. Simmer 350ml of mushroom water with a teaspoon of wine reduction, soy sauce and a few sprigs of savory. Quickly sauté the mushrooms with butter, oil, garlic, parsley, salt and pepper. Add the cornstarch dissolved in water to the gravy and mix well; glaze with butter and filter. Heat the remaining mushroom water which will be used as broth and toast the rice. Add the broth little by little and wait for it to dry before adding more; add salt if necessary. Turn off the heat and stir with butter, porcini mushrooms, a few spoonfuls of gravy, Parmigiano Reggiano and broth. Serve with plenty of porcini mushrooms, cracked pepper and parsley powder.
