Di dalam blender, masukkan bawang putih, bawang merah, kemiri, kunyit, ketumbar, lada putih butir, cabai merah keriting dan minyak, blender hingga halus 2. Panaskan wajan, tumis bumbu halus hingga wangi dan mengeluarkan minyak. Sisihkan dan biarkan dingin 3. Potong-potong daun bawang. Belah punggung udang lalu marinasi dengan baking powder, aduk rata 4. Masukkan bumbu halus, garam, kaldu ayam bubuk, gula pasir, penyedap, telur dan santan, aduk rata kemudian tambahkan daun bawang dan kemangi, aduk rata 5. Siapkan daun pisang, letakkan daun salam, serai, cabai rawit merah dan udang. Bungkus dan sematkan tusuk gigi. Kukus selama 12-15 menit 6. Pepes udang siap disajikan =================== [ENGLISH] Shrimp Pepes Recipe (yield 6 servings) Ingredients: 300 g peeled shrimp 1/3 tsp baking powder 1 tbsp sugar 1½ tsp salt 1/2 tsp MSG 1 tsp chicken powder 1 pc egg 2 tbsp coconut milk 3 stalk green onion 35 g lemon basil Spices: 5 clove garlic 8 pc shallot 6 pc red curly chili 3 pc candlenut 5 cm turmeric 1 tsp coriander 1 tsp white peppercorn 70 ml oil Other ingredients: 1 stalk lemongrass, sliced 8 pc bay leaf 12 pc red Thai chili Banana leaf + toothpick Serving: Steamed white rice Steps: 1. In a blender, add garlic, shallot, candlenut, turmeric, coriander, white peppercorn, red curly chili, and oil. Blend until smooth. 2. Heat a pan. Sauté the blended spices until fragrant and oily. Set aside and let cool. 3. Slice the green onion. Slit the back of the shrimp, then marinate with baking powder. Mix well. 4. Add the sautéed spices, salt, chicken powder, sugar, MSG, egg, and coconut milk. Mix well, then add green onion and lemon basil. Mix well. 5. Prepare the banana leaves. Place bay leaf, lemongrass, red Thai chili, and shrimp. Wrap and secure with a toothpick. Steam for 12–15 minutes. 6.
